200g sliced carrots
200g cucumber
400g cooked, diced & peeled potatoes
150g overnight soaked, dry green peas
20g chopped coriander
15g chopped chilies
1 tsp ground red chilies
2 tsp salt
Whole lemon
1 tsp fenugreek seeds
75g ground sesame seeds
70 ml oil (mustard oil preferred)
1 tsp chaat masala

Add sliced cucumber, carrot, potatoes, and peas in a metal bowl.

In a separate bowl, add ground sesame seed and pour lemon juice, mix.

Add a little bit of water to sesame to make smooth and transfer to the Achaar mixture.

Put green chilies, ground chilies, salt, chaat masala and mix gently.

Heat up the oil on a small pan with fenugreek seeds until dark in colour.

After taking the pan off the heat, carefully add the ground turmeric to the pan.

Pour the oil on the achaar mixture and mix it with a spoon.

Mix with the hand very well, to combine all the spices together.

Transfer to a clean bowl and sprinkle fresh coriander.
