2 cups grated cabbage
1 teaspoon ground black pepper
1 teaspoon cumin powder
1 teaspoon coriander powder
1.5 teaspoons salt (to taste)

In a bowl, combine 1.5 cups of all-purpose flour with 0.5 teaspoons of salt.

Add 1 tablespoon of olive oil and mix with hands.

Gradually add 1 cup of water, mixing until the dough forms; add more water if needed until the dough is soft but not sticky.

Cover the dough with a wet paper towel and set aside.

In a heavy-bottomed pan over high heat, melt 0.5 tablespoons of ghee.

Add 1.5 cups of grated tofu and 1.5 cups of grated zucchini; mix without cooking too much.

Reduce heat to medium-high and add 1 cup of finely chopped green pepper, 1 cup of grated carrots, and 2 cups of grated cabbage; mix well.

Add 1 teaspoon of ground black pepper, 1 teaspoon of cumin powder, 1 teaspoon of coriander powder, and 1.5 teaspoons of salt to taste; mix everything together.

Transfer the filling to a bowl to prevent further cooking from the pan's heat; add chopped coriander leaves and mix well.

Prepare the steamer by heating water in the pot below and spraying the steamer pot with cooking spray to prevent sticking.

Take a portion of the dough and keep the rest covered; roll it out on a floured surface until thin.

Use a metal or glass round object to cut out circles from the rolled dough.

Place about 1 tablespoon of filling in the center of each wrapper.

Wet the edges of the wrapper with water and fold to seal, pinching the edges together to form a dumpling.

Alternatively, create a different shape by folding and pressing the edges together in a pattern.

Once all dumplings are formed, place them in the steamer and cover.

Steam for 15-20 minutes until the wrappers are translucent and cooked through.

Carefully remove the momos from the steamer and serve hot with tomato chutney.
