1

Measure 3 cups of rolled oats in a bowl.

2

Optionally, you can use instant oats instead of rolled oats.

3

Add 1 cup of semolina to the oats.

4

Add 1/2 teaspoon of turmeric powder, 1/2 teaspoon of red chili powder, 1 teaspoon of cumin seeds, 1/2 teaspoon of amchur powder, and 1 teaspoon of salt to the mixture.

5

Grind the oats into a fine powder using a grinder.

6

Combine the ground oats with the semolina and spices in a bowl.

7

Gradually add water to the mixture while stirring until you achieve a slightly thick batter consistency.

8

Let the batter rest for 15 to 20 minutes, or up to 30 minutes.

9

After resting, check the consistency of the batter and add more water if it is too thick.

10

Heat a tava (griddle) and check the batter consistency again, adding 1/2 glass of water if necessary.

11

Grease the tava with oil using a tissue paper.

12

Pour a ladle of batter onto the tava and spread it gently without stirring.

13

Cook for about 2 minutes until bubbles form on the surface.

14

Reduce the heat and add 1 tablespoon of oil around the edges of the dosa.

15

Cook on low heat for 5 minutes, checking for puffing in the center.

16

If the dosa puffs up, gently press it down and add a bit more oil if needed.

17

Flip the dosa once the edges start to lift and cook the other side until golden brown.

18

Remove the dosa and keep it warm while you prepare the remaining batter.

19

For a crispier dosa, add a little more water to the batter to make it thinner.

20

Grease the tava again and pour the thinner batter, spreading it gently.

21

Cook on low heat for 10 minutes, checking for puffing.

22

Flip and cook the other side for 5 minutes until done.

23

Spread 1 tablespoon of ghee on the cooked dosa and sprinkle with chutney powder or grated paneer if desired.

24

Serve the dosa hot.
