1/4 cup Bengal gram
1/2 cup urad dal
1 teaspoon fenugreek seeds
water
1 teaspoon sea salt
1 teaspoon woodpressed sesame oil
2 whole red chilies
fresh curry leaves
4 tomatoes
2 green chilies
1 tablespoon Kashmir chili powder
1/4 teaspoon turmeric powder
1/2 teaspoon organic jaggery powder

Add 1 and 1/2 cups rolled oats, 1/4 cup Bengal gram, and 1/2 cup urad dal into a bowl

Rinse with water a couple of times until water runs clear

Soak the mixture in water for 3 to 4 hours

After soaking, rinse again and add to a blender

Add 1 and 1/2 cups water and 1 teaspoon sea salt to the blender

Blend until it reaches dosa batter consistency

Pour the batter into a bowl and mix by hand for 10 to 15 times

Cover and allow to ferment overnight or for 8 to 12 hours

Once fermented, the batter should be airy with bubbles

Heat a cast iron tawa and lightly grease with woodpressed sesame oil

Pour one ladle of batter and spread it thinly into a round shape

Drizzle with 1 teaspoon woodpressed sesame oil and cover to cook

After about a minute, flip the dosa and cook until crispy

Transfer to a plate and repeat with remaining batter

For the chutney, heat a kaddai and add 1 teaspoon woodpressed sesame oil

Add 1 teaspoon mustard seeds and let splatter

Add 2 broken red chilies and fresh curry leaves

Add 4 chopped tomatoes and slit 2 green chilies

Add sea salt and a splash of water, cover and cook for 2-3 minutes

Mash the tomatoes and add 1 tablespoon Kashmir chili powder and 1/4 teaspoon turmeric powder

Add 1/2 teaspoon organic jaggery powder and mix well

Turn off the flame when done and serve the dosa with chutney.
