1/2 cup urad dal
1 teaspoon methi seeds (fenugreek seeds)
1.5 cups water
1 teaspoon sea salt
1 teaspoon wood pressed sesame oil
2 whole red chillies
fresh curry leaves
4 tomatoes
2 green chilies
1 tablespoon kashmiri chili powder
1/4 teaspoon turmeric powder
1/2 teaspoon organic jaggery powder

Add 1.5 cups old-fashioned rolled oats, 1/4 cup Bengal gram, 1/2 cup urad dal, and 1 teaspoon methi seeds into a bowl.

Wash and rinse the mixture until the water runs clear.

Soak the mixture in water for 3-4 hours to release phytic acid.

After soaking, rinse again and transfer to a blender jar.

Add 1.5 cups water and 1 teaspoon sea salt to the blender and blend until it reaches dosa batter consistency.

Mix the blended batter by hand for 10-15 times to aid fermentation.

Cover the batter loosely and allow it to ferment overnight or for 8-12 hours.

After fermentation, the batter should be airy with bubbles.

To make the chutney, heat 1 teaspoon wood pressed sesame oil in a kadai.

Add 1 teaspoon mustard seeds and wait for them to splutter.

Add 2 broken red chillies and a sprig of fresh curry leaves, stir.

Add 4 chopped tomatoes and 2 slit green chilies, season with salt, and cook until softened.

Add 1 tablespoon kashmiri chili powder and 1/4 teaspoon turmeric powder, stir well.

Optionally add 1/2 teaspoon jaggery powder for sweetness, then mix and turn off the heat.

Heat a cast iron tawa and grease it with wood pressed sesame oil.

Pour a ladleful of dosa batter and spread it into a thin circle, drizzle with more oil.

Cover and cook for about a minute until crispy, then flip and cook the other side until crispy.

Transfer the dosa to a plate and repeat with the remaining batter.
