Soak 1 cup of rolled oats in enough water to completely immerse them for about 30 minutes.

After 30 minutes, check that the oats are nice and soft.

Transfer the soaked oats to a mixer jar.

Add 1 medium sized onion roughly chopped, 3 green chilies roughly chopped, and a small piece of ginger finely chopped to the mixer jar.

Add 1/2 teaspoon of rock salt, 1/2 teaspoon cumin seeds, a little asafoetida powder, and a pinch of turmeric powder to the mixer jar.

Grind everything together to get a nice fine batter without adding water, but add a little if needed for consistency.

Transfer the ground mixture to a bowl and check the consistency; dilute with water if too thick.

Heat a dosa pan (tava) over medium heat.

Pour a ladle of the batter onto the hot tava and add a little ghee on all sides.

Cook on one side until done, then flip to the other side and cook until golden.

Serve hot with chutney, such as tangy and spicy tomato chutney.
