Peel and grate the potatoes into a large bowl.

Combine the egg mixture with the grated potatoes and onion until well mixed.

Heat vegetable oil in a skillet over medium heat until shimmering.

Spoon the potato mixture into the skillet, flattening each pancake slightly.

Cook until golden brown, about 4-5 minutes per side.

Transfer the cooked pancakes to a paper towel-lined plate to drain excess oil.

In a small bowl, mix sour cream with chopped fresh dill and lemon juice.

Serve the pancakes warm, topped with the dill sour cream and smoked salmon.

Garnish with chopped chives and additional dill if desired.
