Preheat the oven to 375°F (190°C).
Finely chop the mushrooms and onion.
Sauté the mushrooms and onion in butter over medium heat until softened, about 5-7 minutes.
Add minced garlic and cook for an additional minute.
Remove from heat and let cool slightly.
In a large bowl, combine ground beef, sautéed mushrooms and onion, bread crumbs, egg, milk, parsley, salt, and black pepper.
Mix until well combined.
Form the mixture into meatballs, making a small indentation in the center.
Fill each indentation with a spoonful of mustard.
Seal the meatballs and roll them in flour.
Heat vegetable oil in a skillet over medium heat.
Pan-fry the meatballs until browned on all sides, about 8-10 minutes.
Transfer the meatballs to a baking dish and bake in the preheated oven for 20-25 minutes.
Serve hot, garnished with additional parsley if desired.
