Nigerian Ogbono Soup

Grounded Ogbono seeds 1 Cup
Beef 1 kg
1 medium size Dried Catfish
Small stockfish
Dried or fresh periwinkle
Smoked Crayfish 4 tbsp
Kpomo / Cowskin 3-4 piece
Red palm oil 1/2 Cup
Spinach or Ugu leaves 1 bunch
2 seasoning cubes
Small ginger
Chilli pepper 1/2 tbsp
1/2 onion
Locust bean 1 tsp
1 tsp grounded cloves powder
Small Aidan fruit
Salt 1 1/2 tsp

Soak catfish, stockfish and periwinkle with hot water, leave it for 10 minutes before cleaning, debone the catfish too.

Add palm oil to grounded ogbono seed, mix to combine and set aside.

Wash and chop spinach also set aside.

In a pot, add washed beef and season with salt, chilli pepper, 1 seasoning cube, add washed stockfish, kpomo and Aidan fruit to meat, pour blended onions mix and stir together.

Steam in a low heat for 10 minutes.

After 10 minutes, open and add more water enough to cook meat until soft, cook in a medium heat for 20 minutes.

Open and add deboned catfish, grounded cloves, crayfish and leftover seasoning cube, mix well and bring to a boil.

Immediately it starts boiling, open the pot, scoop mixed ogbono with palm oil into it and whisk with a spoon until it is dissolved.

Add a little bit of hot water if soup is too thick.

Cook in low heat for 5 minutes, then add washed sliced spinach or Ugu leaves and mix together, cook again for 3 minutes without covering the pot.

Remove from heat after this time and serve with your favourite swallow e.g Eba, fufu, pounded yam or amala.
