Heat up your wok or pan and add a suitable amount of vegetable oil.

Add 160 grams of shrimp to the pan, spreading them out. Cook until they change color, then remove them from the heat.

In the same pan, add more vegetable oil and one whole bulb of chopped garlic. Fry until fragrant and starting to brown, but not fully browned.

Add 380 grams (3 cups) of cooked rice to the pan with the garlic. Mix well, breaking up any lumps.

Add 1.5 teaspoons of chicken stock powder, 1 teaspoon of black pepper, and 1 teaspoon of salt to the rice. Mix thoroughly to dry out the rice a bit.

Push the rice aside in the pan and add a little more oil for frying the eggs. Add 6 beaten eggs and semi-cook them before mixing with the rice.

Turn the heat up to high and mix the rice and eggs together until the rice starts to jump around in the pan.

Add 1 tablespoon of fish sauce to the rice and mix well.

Add the cooked shrimp back into the pan and mix them with the rice.

Add 3 tablespoons of dark soy sauce, mixing well to achieve the desired color. Taste and adjust if necessary, adding more dark soy sauce if desired.

Finally, add a big bunch of chopped green onions (from 3 stalks) and mix everything together before turning off the heat.
