Originating from the Bahamas, the tradition of roasting turkey during holidays like Thanksgiving and Christmas has become a cherished family ritual. This dish symbolizes abundance and togetherness, often served alongside local sides like rice and peas. Today, variations exist globally, with families incorporating local flavors and ingredients, making it a versatile centerpiece for festive gatherings.

Wash the turkey and rub it with salt water and vinegar.
Pat the turkey dry.
Prepare a paste using butter, turmeric, and lime juice.
Work the paste under the skin of the turkey, ensuring it's well covered.
Fold the wings behind the turkey to secure them.
Create a bed in the roasting pan with celery, thyme, small white potatoes, and carrots.
Add the paste on top of the turkey along with paprika and parsley flakes.
Stuff the cavity of the turkey with the remaining paste and other ingredients.
Preheat the oven to 400°F (204°C) for an electric stove, or 350°F (177°C) for gas.
After 30 minutes of roasting, baste the turkey with the drippings.
Continue to baste the turkey every 30 minutes.
After two hours, remove the cover to allow for browning and baste again.
Let the turkey rest before carving to allow juices to redistribute.
