Grind 2 lbs of lamb meat and 1 lb of brisket fat trimmings using a medium-sized grinder.

Grate 1 medium yellow onion and squeeze out half of the liquid.

Mix grated onion with 1/4 cup finely diced red bell pepper, 4 cloves of minced garlic, 3 teaspoons of sumac, paprika, salt, crushed red pepper, and a pinch of parsley until sticky.
