Caribbean Beef and Pumpkin Soup

Heat oil in a pot and add brown sugar until it bubbles and darkens.
Add bone-in beef and stir to coat with the browned sugar.
Reduce heat to low, cover the pot, and cook beef for 20-30 minutes until semi-cooked.
Chop scallions, celery, garlic, potatoes, sweet potatoes, yautia, carrots, and onion.
Add all chopped ingredients to the pot and stir to combine, allowing them to sear for 5-7 minutes.
Cover the pot and steam the ingredients while preparing hot water.
Pour in enough hot water to cover the ingredients by two inches.
Add one cup of washed split peas to the pot without pre-cooking them.
Cook on low for 40-50 minutes until beef is tender and split peas are cooked.
Prepare dumplings by mixing all-purpose flour, sugar, salt, and warm water, then knead the dough.
Add additional liquid to the soup before adding dumplings.
Pinch off pieces of dough to form dumplings and add them to the soup.
Cook the dumplings for 10-15 minutes until tender.
Season with salt and freshly ground black pepper before serving.
Finish with chopped scallions, cilantro, or other herbs as desired.
