Ginisang Munggo with Sardinas

This dish reflects the Filipino resourcefulness in utilizing simple ingredients to create nourishing meals. Salt can be used for seasoning if fish sauce is unavailable.
Wash and strain mung beans, then put them in a cooking pot with enough water.
Remove any dead stems from the mung beans.
Cover the pot and boil the beans over low heat.
Soak mung beans overnight for faster cooking (recommended).
Once mung beans are soft, separate them from the water and discard the water.
Mash the softened beans with a spoon, fork, or any available tool until fine.
Set the mashed beans aside.
In a pan, sauté onion and garlic in 1 tablespoon of cooking oil until soft and aromatic.
Add sliced red tomatoes and sauté until soft.
Add canned sardines (any brand or variant) and stir, breaking them into pieces for better flavor.
Stir occasionally to prevent sticking and wait until the sardines turn darker in color.
Add the mashed mung beans once the sardines are cooked and stir.
Add water until it is just an inch above the mung beans level, cover, and continue cooking.
After a few minutes of simmering, season with black pepper, seasoning granules, and salt to taste.
Stir well and cover again.
After simmering, expect the mung beans to become creamier.
Once creamy, add Moringa leaves and mix well.
