Bloom the yeast by mixing 1 cup of warm water with 1/4 teaspoon of sugar and 1 tablespoon of dry yeast. Let it sit for 5-10 minutes until foamy.
In a mixing bowl, combine 500 grams of all-purpose flour, 1 tablespoon of black garlic infused sea salt, 1 teaspoon of baking powder, and 1/2 teaspoon of baking soda.
Transfer the dry ingredients to a food processor and mix briefly.
Add 3/4 cup of full fat Greek yogurt to the food processor.
Drizzle in the bloomed yeast mixture and mix until a dough forms.
Turn the dough out onto a floured surface and knead lightly until smooth.
Place the dough in a greased container and let it proof in a warm place until doubled in size.
Divide the dough into 10 equal portions, each about 93-94 grams.
Roll each portion into a ball and let them rest for at least 30 minutes.
Roll out each ball into an oval shape about 1/8 to 1/4 inch thick using a rolling pin.
Preheat a grill with a griddle attachment to 475°F, then place the rolled naan on the hot griddle.
Cook for 45-60 seconds until puffed and lightly charred, then flip and brush with ghee.
Remove from the grill and optionally sprinkle with cilantro.
