1

Get some ice and pop it into a bowl of water.

2

Add gelatin sheets to the water, separating them slightly to allow the water to absorb for about 5-10 minutes.

3

In a saucepan, combine 200 milliliters of milk and 300 milliliters of whipping cream.

4

Add sugar to the milk and cream mixture.

5

Split the Madagascan vanilla pod in half and scrape the seeds into the milk and cream mixture, adding the pod as well.

6

Heat the milk and cream mixture slowly to avoid burning, checking that it reaches around 70 to 80 degrees Celsius.

7

Remove the bloomed gelatin from the water, squeeze out excess moisture, and transfer it to a separate jug.

8

Pour the hot milk and cream mixture over the gelatin and mix well to ensure the gelatin fully dissolves.

9

Place the molds on a tray for easy transport and weigh out 100 grams of the mixture into each mold.

10

Agitate the mixture slightly while filling the molds to evenly distribute the vanilla.

11

Refrigerate the filled molds for at least 3 hours to set the panna cotta.

12

Prepare the berry mixture by adding raspberries and strawberries to a bowl, reserving some for garnish.

13

Add a pinch of sugar and lemon zest to the berries and mix well.

14

Let the berry mixture sit for 20 minutes to macerate and draw out moisture.

15

In a hot frying pan, quickly cook the berry mixture until the edges of the strawberries become translucent, then remove from heat and cool in the fridge.

16

After about an hour, check the panna cotta; it should be set but ideally, let it chill for 3 hours or more for a firmer set.

17

To unmold the panna cotta, press gently on top to release it from the mold, then tip it out onto a plate.

18

Garnish the panna cotta with the cooked berry mixture and fresh berries.
