1/4 tsp sesame oil
1/2 tbsp Shaoxing wine
1 tsp salt

Wash, clean, and score the silver pomfret on both sides.

Cut ginger into strips.

Sprinkle salt on the fish and rub it in, including between the cuts and in the stomach.

Stuff the stomach of the fish with ginger strips.

Place the remaining ginger strips on a heatproof plate.

Put the fish on top of the ginger strips on the plate.

Place the plate inside the steamer over boiling water.

Cover the steamer and set the time for 12 minutes.

In a mixing bowl, combine 200ml water, Shaoxing wine, sesame oil, light soy sauce, and oyster sauce; mix until well dissolved.

After 12 minutes, carefully lift the plate from the steamer and pour out any fishy water.

Put the plate back in the steamer and pour the sauce mixture over the fish.

Cover the steamer and continue to steam for 5 more minutes.

After 5 minutes, remove the plate from the steamer, garnish with spring onions, and serve.
