Preheat the oven to 180° C.

Chop 1 onion finely.

Add 1 tablespoon of olive oil to a non-stick pan on high heat.

Thinly slice 1 clove of garlic and add it to the pan with the onions and some thyme, sauté until caramelized.

In a food processor, add 50 mL of olive oil, the caramelized onions, and 150 g of sliced bread, and beat until the bread breaks down.

Add 1 teaspoon of dry oregano, 1 teaspoon of smoked paprika, and 50 mL of milk to the mixture in the food processor and beat until completely combined.

Transfer the mixture to a large bowl.

Add 500 g of ground pork, 500 g of ground beef, the grated zest of 1 lemon, and 1 egg to the bowl.

Finely chop the mint leaves and parsley, then add them to the bowl along with 20 g of salt and pepper.

Mix the ingredients by massaging them between your fingers until completely combined.

Shape the mixture into 6 to 8 large patties, each weighing between 220 to 250 g.

Place the patties on a rimmed baking sheet lined with parchment paper and drizzle with Greek extra virgin olive oil.

Roast the meatball burgers in the oven for about 30 to 40 minutes.

Serve the burgers with mashed potatoes, drizzle with extra virgin olive oil, and season with pepper and paprika.
