Kootu Curry

Kootu curry is a traditional South Indian dish made with lentils and vegetables, often served as a side dish with rice.

1½ cups brown chickpeas (kala chana), soaked overnight and boiled
200 grams yam (suran), peeled and cut into small cubes
200 grams raw banana, peeled and cut into small cubes
¾ tsp turmeric powder
Salt to taste
2 tbsps coconut oil
1½ tsps mustard seeds
6-8 curry leaves
2 dried red chillies, broken
½ cup scraped fresh coconut
½ tsp crushed black peppercorns
2 tsps red chilli powder
2 tbsps coconut paste
½ tbsp coriander powder
2 tsps jaggery powder

Heat a deep non-stick pan, add yam, raw banana, ½ tsp turmeric powder, salt, and ½ cup water and mix. Cover and cook for 10-15 minutes.

Meanwhile, heat coconut oil in a non-stick pan, add mustard seeds and let them splutter. Add curry leaves, dried red chillies and coconut and sauté till golden brown.

Add crushed black peppercorns and mix and take the pan off the heat.

Add cooked raw banana into cooked yam and mix. Add brown chickpeas, remaining turmeric powder, red chilli powder, salt, coconut paste and coriander powder and mix well. Add boiled chickpeas liquor and mix, cover and cook for 2-3 minutes.

Add coconut mixture and mix and cook for 2-3 minutes. Add jaggery powder and mix, cook for 2-3 minutes and take the pan off the heat.

Transfer this into a serving bowl and serve hot.
