Kootu Curry

250g Yellow Pumpkin
100g Black Chickpeas
1 Whole Coconut
5 to 6 Dry Red Chilli
1/2 tsp Cumin Seeds
Curry Leaves (As Required)
1 1/2 tbsp Chilli Powder
3 to 4 Green Chilli
Salt (To Taste)
Coconut Oil (For Cooking)

Rinse the split yellow moong dal under running water until the water runs clear.

In a pot, add the rinsed dal and 2 cups of water. Bring to a boil and then simmer until the dal is soft, about 15-20 minutes.

In a separate pan, heat oil over medium heat. Add mustard seeds and let them splutter.

Add cumin seeds and slit green chilies to the pan, sautéing for a minute until fragrant.

Add the mixed vegetables to the pan and stir-fry for about 5 minutes.

Add turmeric powder and salt to the vegetables, mixing well.

Once the vegetables are slightly tender, add the cooked dal to the pan and mix everything together.

Add grated coconut and stir well, cooking for another 5 minutes to combine the flavors.

Garnish with fresh coriander leaves before serving.
