It reflects the agricultural bounty of Sudan, with ingredients like rice and lamb being staples in Sudanese cuisine. Today, Tagalia is cherished not only in Sudan but also among the Sudanese diaspora, who prepare it to celebrate their heritage and share it with others.

Chicken is leaner and often less expensive than lamb.

Olive oil offers healthier fats, while sunflower oil is often cheaper.
Fry onions until they start turning golden brown.
Add water to the frying onions.
Add a cinnamon stick, coriander powder, and black pepper.
Add ginger garlic paste and tomato paste.
Add Vegeta and combine the mixture.
Add a little more water and cook covered for 15 to 20 minutes until the onions soften.
Remove the cinnamon stick and mash the onions.
Add cumin powder while stirring.
Add more water to make up the stew, being careful not to add too much to avoid a runny consistency.
Add dry okra powder and whisk it into the stew base continuously to prevent lumps.
Taste the stew to ensure it is well seasoned and add salt to taste.
Let it blend for 1 to 2 minutes before turning off the heat.
