Limpar o peixe cascudo (link na descrição)
Temperar o peixe com sal, pimenta-do-reino, e o suco de meio limão
Preparar o molho: cortar 2 cebolas, 1 tomate, e 2 pimentões (um verde e um amarelo)
Em uma panela, adicionar 3 colheres de chá de óleo e 4 dentes de alho picados
Adicionar um pouco de sal e refogar o alho até dourar
Adicionar o tomate e os pimentões picados na panela
Adicionar 1 colher de colorau e mexer bem
Adicionar 1 colher de orégano e 2 folhas de louro
Adicionar 1 colher de açafrão e misturar
Adicionar meio litro de água e deixar cozinhar até o tomate dissolver
Adicionar as cebolas cortadas e o cheiro verde
Colocar o peixe cascudo na panela e cozinhar por 15 minutos
Verificar se o peixe está cozido e ajustar o sal se necessário
Servir o peixe cascudo ao molho caseiro
