Roughly chop garlic.
Chop onion and bell pepper (green).
Chop yellow potatoes.
Chop ginger.
Chop scotch bonnet pepper, removing seeds.
Chop scallion and thyme.
Wash and clean the goat meat.
Season the goat meat with all-purpose seasoning, garlic powder, onion powder, and curry powder.
Add chopped onion, scallion, thyme, scotch bonnet pepper, and pimento seeds to the meat.
Rub the seasoning into the meat thoroughly.
Marinate the meat for 4 to 6 hours or overnight.
Add oil to a pot and heat it.
Add curry powder to the oil and cook for about 1 minute.
Pour in coconut milk and add canned gongo peas.
Add chopped scallion, thyme, green bell pepper, garlic, ginger, and salt to taste.
Cover the pot and cook for about 10 to 15 minutes.
Add washed rice (3 cups) to the pot.
Cook on medium heat for about 15 minutes, then lower the heat and cook for an additional 10 minutes.
After about an hour and a half, check the meat; if not tender, do not add vegetables yet.
Once the meat is tender, add back in fresh seasoning: onion, bell peppers, and potato.
