Place mackerel in a pot.
Add chopped onion and blended ginger to the pot.
Add curry powder, dried thyme, and fish seasoning to the pot.
Season with salt according to taste.
Cook the fish for less than 20 minutes until done, then debone it.
Heat a pan on the cooker and add vegetable oil.
Once the oil is hot, add lots of onions and fry for a bit.
Add curry powder and dried thyme to the frying onions.
Pour in the prepped tatache and tomato blend, using a 2:1 ratio of tatache to tomato.
Season the mixture with salt and fish seasoning powder.
Allow the sauce to fry and reduce, covering it to prevent splatter.
Wait until the oil floats to the top, indicating the sauce is ready.
Add the cooked fish to the sauce, mixing gently without overcooking the fish.
Allow the mixture to settle for a bit before serving.
