Peel and finely chop cloves of garlic.

Cut Chinese chives into chunky bits, about one-third length.

Slice sirloin beef thinly, about half a cm in thickness, at an angle.

Marinate the sliced beef with a couple of teaspoons of light soy sauce, a couple of teaspoons of oyster sauce, a bit of sesame oil, and crushed black pepper. Massage the marinade into the beef for a couple of minutes until glossy.

Add corn flour to the marinated beef and mix well until the color lightens and becomes glossy.

Heat vegetable oil in a frying pan until hot and smoky.

Add the marinated beef to the pan, spreading it out to make contact with the pan. Cook until browned, then remove to a bowl.

Add more oil to the pan and add fresh flat rice noodles. Stir-fry for a couple of seconds to get some caramelization.
