Heat olive oil in a large pot over medium heat until shimmering.
Add chopped onion, carrots, and celery; sauté until softened, about 5-7 minutes.
Stir in minced garlic and cook until fragrant, about 1 minute.
Pour in chicken broth and bring to a boil.
Add meatballs and cook until they float to the surface, about 10 minutes.
Stir in orzo pasta and cook until al dente, about 8-10 minutes.
Add spinach and cook until wilted, about 2-3 minutes.
Season with salt and black pepper to taste.
Remove from heat and stir in chopped parsley and lemon juice.
Serve hot, garnished with grated parmesan cheese.
