Italian Wedding Soup

1 lb. meatloaf mix or ground beef
¼ cup chopped parsley
2-3 minced cloves garlic
½ cup bread crumbs
¼ cup milk or cream
1 egg
½ cup grated cheese
salt and pepper to taste
2-3 tbsp olive oil
1½ cup celery chopped small
1½ cup carrots chopped small
1 medium onion chopped small
1 head escarole or 6-8 oz of fresh spinach
8-10 cups chicken broth or stock
½ pound of pasta of your choice (orzo, ditalini or acini de pepe) (optional)

For the Meatballs: Mix all ingredients well. Shape into 1 inch balls. You can drop the meatballs into the soup until cooked or the meatballs can be sautéed in a little olive oil.

For the Soup: Sauté celery, onion, and carrots in olive oil till softened, about 10-15 minutes.

Add the chicken broth. Add the meatballs. Simmer till vegetables are cooked.

Cut up escarole in small pieces and add to the soup.

Boil the pasta in a separate pot then drain.

Place a spoon of pasta in a bowl and add the soup mixture over the top.

Serve with grated cheese and enjoy.
