400g Boneless Chicken Breast (sliced thinly)
1 tbsp Light Soy Sauce
1/2 tsp Dark Soy Sauce
1/2 tbsp Rice Vinegar
1/4 tsp Salt
1/4 tsp Baking Soda
3 tsp Cornstarch
2 tbsp Hoisin Sauce
1 tbsp Rice Vinegar
1/2 tbsp Light Soy Sauce
1/2 tsp Dark Soy Sauce
1 tsp White Vinegar
2 tsp White Sugar
1/2 tsp Black Pepper Powder
4 tbsp Water
1 Medium Onion (cut into wedges)
2 tsp Chopped Garlic
3/4 cup Green Capsicum / Green Bell Pepper
3/4 cup Red Capsicum / Red Bell Pepper
1/2 cup Yellow Capsicum / Yellow Bell Pepper
2 tbsp Spring Onion Greens (for garnish)
3 tbsp Oil
1/4 tsp Pepper Powder
A pinch of Salt (for seasoning)

Marinate the chicken for 30 minutes.

Prepare the stir-fry sauce and chop all vegetables.

Heat oil in a wok, stir-fry onion for 30 secs.

Add chicken and brown for 3 minutes.

Add garlic, stir-fry for 1 min.

Add bell peppers, salt, pepper powder, and stir-fry on high heat.

Pour in the stir-fry sauce, mix and cook for 2-3 mins.

Garnish with spring onions and serve hot!
