400 grams chicken breast
1 tsp garlic powder
1 tsp ginger powder
1 tsp onion powder
1 tsp black pepper
1 tsp paprika
1 tsp chicken seasoning
½ tsp salt
2 tbsps cornflour
1 tsp sesame oil
1 tsp light soy sauce
1 tsp dark soy sauce
1 tsp oyster sauce
1 tsp red cooking wine
1 tsp sweet chili sauce
1 tsp chili garlic sauce
1 tbsp tomato ketchup
1 small onion
50 grams red bell pepper
50 grams yellow bell pepper
50 grams green bell pepper
2 slit green chilis
50 grams spring onion

Take 400 grams of chicken breast and keep it in the freezer for 10 minutes.

Stroke the chicken with a heavy object to flatten it.

Cut the chicken into long slices.

Marinate the chicken with 1 tsp garlic powder, 1 tsp ginger powder, 1 tsp onion powder, 1 tsp black pepper, 1 tsp paprika, 1 tsp chicken seasoning, ½ tsp salt, 2 tbsps cornflour, and 1 tsp sesame oil. Mix well and let it rest for 1 hour.

Prepare the sauce by mixing 1 tsp light soy sauce, 1 tsp dark soy sauce, 1 tsp oyster sauce, 1 tsp red cooking wine, 1 tsp sesame oil, 1 tsp sweet chili sauce, 1 tsp chili garlic sauce, and 1 tbsp tomato ketchup. Adjust salt according to taste and add 1 tbsp cornflour. Mix well.

Heat oil in a pan and add the marinated chicken. Fry on medium to high flame until light golden, about 5-6 minutes, tossing and turning each piece.

Remove the chicken from the pan and add 1 tsp chopped garlic, 1 tsp chopped ginger, and 2 slit green chilis. Add 1 small onion cut into long slices and fry for 10-15 seconds until half fried.

Add 50 grams each of red, yellow, and green bell pepper. Sprinkle some salt and half fry the bell peppers without overcooking them.

Add the prepared sauce to the pan and cook for 3-4 minutes, covered, stirring occasionally.

Add the fried chicken back to the pan and mix well. Turn the flame to low and cook for 5 minutes.

Add 50 grams of spring onion, mix it in, and continue to cook on low for another 5 minutes.

Turn off the flame and dish out the chicken stir fry. Garnish with spring onion and sprinkle chili flakes if desired.
