Add olive oil to a pan over medium low heat.

Add 1 diced onion, 1 diced red capsicum, and 2 minced garlic cloves to the pan and fry for 8 minutes.

Add 1 tablespoon of fresh thyme, 8 cherry tomatoes, 1 scotch bonnet chili, 1 teaspoon of seaweed flakes, and 0.5 teaspoon of salt to the pan along with 2 tablespoons of bargain mustard sauce and cook for 2 minutes.

Add the banana blossoms to the pan and stir them in.

Add 400 ml of water to the pan and bring to a simmer.

Cook with the lid partially on for 15 minutes, checking to see if the banana blossoms are tender.

Switch off the heat and add the juice of half a lime to the mixture and set aside for later.

For the cuckoo, take 1 cup of cornmeal and gradually add 1 cup of cold water, mixing thoroughly until it forms a paste.

In a separate pan, add 1 cup of water and salt and bring to a boil.

Add 4 finely sliced okra to the boiling water, then gradually add the cornmeal paste while stirring continuously.

Turn the heat down to low and keep stirring the mixture for around 15 minutes until it stops sticking to the side of the pan.

Use a wet spoon or greased bowl to serve the cuckoo as a side to the flying fish.
