1

Start by preparing the dough for papdi.

2

Take 3 cups of flour and add 1 teaspoon of melted ghee, 1 teaspoon of salt, and 1 teaspoon of ajwain.

3

Mix these ingredients well until they are combined.

4

Gradually add water to knead the dough, ensuring it is not too soft for a crispy texture.

5

Knead the dough for about 5 minutes and then cover it to rest for 10 minutes.

6

After 10 minutes, divide the dough into four portions.

7

Roll out one portion of the dough, ensuring it is not too thick or too thin.

8

Use a cookie cutter or a steel glass to cut out shapes from the rolled dough.

9

Make fork marks on the cut pieces to ensure they fry evenly.

10

Heat oil in a pan until it is lightly hot, then fry the papdis until they are light golden brown on medium flame.

11

Remove the fried papdis and place them on a plate.

12

Repeat the frying process for the remaining dough portions.

13

To prepare the chaat, break about 10 papdis into a serving dish.

14

Add 1 cup of boiled chickpeas to the broken papdis.

15

Add one large boiled potato, chopped.

16

Add 2 chopped tomatoes and 1 chopped onion.

17

In a bowl, take 3 cups of yogurt and thin it with a little water, then add it to the dish.

18

Top with more broken papdis, 1 tablespoon of chaat masala, 1/2 teaspoon of salt, and 1/2 teaspoon of red chili powder.

19

Add tamarind chutney and green chutney as desired.

20

Sprinkle some chopped fresh coriander on top and serve.
