Make the papdi dough by mixing 1 cup refined flour, 1/3 teaspoon salt, less than 1/2 teaspoon carom seeds, and 2 tablespoons oil. Knead a hard dough with water and let it rest for half an hour.

Mash 3 boiled potatoes and mix with 1 finely chopped green chili, 1/2 inch finely chopped ginger, 1/2 teaspoon roasted cumin powder, 1/4 teaspoon salt, 1/4 teaspoon black salt, and 1/4 cup boiled green peas. Mix well to prepare aloo matar masala.

Knead the rested dough again to make it soft, then break it into balls and roll each ball into a thin circle.

Poke the rolled dough with a fork to prevent it from puffing during frying. Fry the papdi in preheated oil at low-medium heat until golden brown on both sides.

Prepare the curd by beating 2 cups fresh curd, adding 2 teaspoons sugar and 1/4 teaspoon black salt. Beat until smooth.

Assemble the chaat by dipping a papdi in the curd, adding aloo matar masala, more curd, green chutney, sweet chutney, black salt, roasted cumin powder, chaat masala, red chili, fine sev, and pomegranate seeds.
