Split the pig's kidney in half with a sharp knife, exposing the white gristly membrane which needs to be removed.

Use a flexible bladed knife to lift off the membrane from the kidney.

Heat a little knob of butter in a pan over medium heat.

Add the kidneys to the pan and lightly fry them.

Add the whole grain mustard, red currant jelly, and chili flakes to the pan.

Add a couple of splashes of water and Worcestershire sauce to the mixture.

Melt down the red currant jelly in the pan, stirring to combine.

Add a splash of Brandy to the mixture and allow it to reduce.

Taste the mixture and adjust seasoning with salt and pepper as needed.

Once the sauce has thickened to a nice consistency, serve the kidneys on toasted bread, garnished with chopped parsley.
