Kjøttkaker, or Norwegian meatballs, have roots in traditional Scandinavian cuisine, often served with brown sauce and potatoes. This comforting dish reflects the hearty, rustic flavors of Norway, commonly enjoyed during family gatherings and festive occasions. Today, variations exist across the globe, with many adapting the recipe to local tastes while maintaining its essence.
ground beef

Olive oil is healthier, while margarine is often less expensive.
Place ground beef in a bowl.
Add salt, potato flour, fresh ground pepper, and ground nutmeg.
Gradually add water while mixing with hands to form a smooth dough.
Shape the mixture into imperfect meatballs.
Heat butter in a frying pan over medium heat.
Fry the meatballs, flipping them occasionally until cooked through.
Remove meatballs from the pan and let them rest.
In the same pan, add butter and let it melt.
Add wheat flour and stir until there are no chunks, cooking until it turns a nutty brown color.
Slowly add store-bought broth while stirring to create gravy.
Add salt and pepper to the gravy.
Return the meatballs to the gravy and let them simmer for about 10 minutes, stirring occasionally.
In a pot, add a small amount of broth and peas, then add butter and boil for a few minutes.
Use a mixer to blend the peas into a stew.
Serve meatballs with brown gravy and a side of mushy peas, garnished with lingonberry jam.
