1

Cut the yam into thick slices and peel it gently.

2

Place the peeled yam in three pots, cover slightly with water, and add salt to taste.

3

Boil the yam at medium to high heat until tender.

4

Blend bell peppers, tomatoes, onions, garlic, and ginger to make a mixture.

5

Pour the blended mixture into a pot and boil to remove excess moisture from the peppers.

6

Clean the mackerel fish by removing the insides, gills, and rinsing it.

7

Season the cleaned mackerel and place it on parchment paper in the oven at 400 degrees for 15 minutes on each side.

8

After 30 minutes of boiling the pepper mixture, remove it from the heat and pour it into a container.

9

In the same pot, add three cooking spoons of vegetable oil and chopped onions, along with seasoning cubes and rosemary.

10

Stir continuously and add the boiled pepper mixture to the oil.

11

Allow to boil for another 15 to 20 minutes on low to medium heat.

12

Debone the grilled mackerel and add the fish to the pepper mixture, seasoning with about 1/2 teaspoon of salt to taste.

13

Simmer the mixture for another 10 minutes on low heat.

14

Check the yam; once soft, remove it from the heat.
