Place seasoned pork in a pot and add bay leaves and enough water to cover the pork.

Cover the pot and cook over medium heat until the water evaporates, about 30 minutes.

Once the water is gone, increase heat to medium-high and allow pork to fry in its own fat.

Fry until the pork is golden brown and crispy, stirring occasionally, about 10-15 minutes.
