Light the charcoals and prepare the cookware for grilling in a wood-fired oven.

Slice tomatoes and peppers for the stew.

Prepare a spice mixture with allspice seeds, nutmeg, cumin, smoked paprika, sweet paprika, thyme, rosemary, onion powder, granulated garlic, mustard seeds, sumac, lemon pepper, and salt.

Bash the spices in a mortar and mix them to flavor the salt.

Slice the goat meat and add most of the spice mixture to it, keeping some for seasoning later.

Layer onions at the bottom of the earthware pot.

Add a thick layer of peppers on top of the onions.

Pour in 150 ml of olive oil and then add a thick layer of tomatoes.

Add a layer of carrots and then place the goat meat on top.

Pour in 200 ml of water and cover everything with tomatoes.

Preheat the wood-fired oven to around 200°C (392°F).
