Mix sugar and salt together. Pour it on the salmon.
Put the salmon into a plastic bag. Place it in the refrigerator overnight.
Next day pour the remaining salt-sugar mixture in water.
Pour brine into a bowl.
Place salmon into the brine.
Place the bowl in the refrigerator overnight.
First, melt butter and add the flour. Stir the mixture.
Add the milk. Continue to stir.
Add the heavy cream. Keep stirring.
Add salt and pepper to taste.
Optional add nutmeg to taste.
Add the chopped dill. Stir everything together.
Next, remove the skin from the salmon.
Cook salmon in a pan of water for a couple of minutes until tender.
Pour sauce over the potatoes and salmon. Sprinkle chopped dill over the sauce if desired.
