1 onion (about 120 g)
15 g basil
1 kg ripe tomatoes
300 g re-milled semolina
200 g type 1 flour
5 g yeast

Add 50 g of extra virgin olive oil to a bowl.

Add 10 g of salt and 1 teaspoon of oregano to the bowl.

Chop 1 onion (about 120 g) and add it to the bowl.

Add 15 g of basil to the mixture.

Add 1 kg of ripe tomatoes, chopped, to the bowl.

Add 300 g of re-milled semolina and 200 g of type 1 flour to the mixture.

Sprinkle 5 g of yeast into the bowl.

Mix all the ingredients together until combined.

Let the mixture rest for 3 hours.

After resting, transfer the mixture to a 30 x 40 cm baking tray.

Let it rest for an additional 1 hour.

Preheat the oven to 200°C.

Bake in static mode for 30 minutes, then switch to ventilated mode for an additional 5 minutes.

Remove from the oven and let it cool on a rack for a few minutes.
