Prepare 3 slices of ginger and mince 3 cloves of garlic.
Cut 1 zucchini into thick slices.
Cut 1 stick of celery at an angle into similar size pieces as the zucchini.
Cut cabbage into roughly 2 inch by 2 inch pieces and separate the layers.
Cut broccoli into bite-sized pieces.
Add carrot slices for color.
Rinse the shrimp with cold water and pat dry.
Marinate the shrimp with salt, a little sugar, white pepper powder, cornstarch, and water; mix evenly and add a touch of sesame oil.
Prepare a cornstarch and water mixture by mixing cornstarch and cold water until dissolved.
Add vegetable oil to a hot pan over medium-high heat.
When the oil is hot, add a little sugar and salt to the oil.
Immediately add broccoli, celery, and carrot slices to the pan and stir fry for about 40 seconds.
Add a touch of rice wine (optional) and stir fry until the alcohol evaporates, then remove from the pan.
Add more oil to the pan if needed and stir fry cabbage and zucchini for about 30 seconds.
Add a touch of rice wine (optional) and stir fry for another 30 seconds, then remove from the pan.
Add more oil to the pan if needed and add ginger slices and shrimp, spreading the shrimp out to pan fry until the bottom is golden brown.
Turn the shrimp over to pan fry the other side and add minced garlic to the pan.
Stir the garlic in the pan until coated with oil, then add a touch of rice wine (optional) and stir fry until the liquid evaporates.
Season the shrimp with oyster sauce and dark soy sauce, then stir fry until the shrimp color is even.
Add the cornstarch and water mixture, stirring to incorporate; the mixture will boil and thicken into a sauce.
Add all the vegetables back to the pan and toss to mix everything together.
