Prepare the ingredients: zucchini, eggplant, red pepper, yellow pepper, onion, tomatoes, lemon, garlic, and spices.

Make the stuffing by mixing onion, tomato, rice, lemon juice, half cup of water, chili paste, tomato paste, olive oil, salt, black pepper, paprika, seven spices, and sumac.

Stuff the eggplant, zucchini, red pepper, yellow pepper, and tomato with the rice mixture, leaving some space for expansion.

Prepare the sauce by mixing lemon juice, garlic, mint, chili paste, and tomato paste.

Place the stuffed vegetables in a pot and pour the sauce over them. Add more water if needed.

Cook on high heat for 30 minutes, then reduce to low heat for another 30 minutes.
