1

Chop 175 grams of onion into large pieces.

2

Chop 1 medium-sized red bell pepper into large pieces, not too finely.

3

Squeeze out all the water from the chopped vegetables; this step is crucial to avoid problems while making kebabs.

4

In a bowl, add 500 grams of minced meat (200 grams lamb and 300 grams beef) and chop it well.

5

Add 1 teaspoon of salt, 1 teaspoon of cumin powder, 0.5 teaspoon of black pepper powder, 0.5 tablespoon of crushed red chili, and 1 tablespoon of fresh minced garlic to the minced meat.

6

Add the squeezed vegetables to the meat mixture and mix everything well.

7

Cover the mixture and refrigerate for 30 minutes to ensure it is cold before shaping the kebabs.

8

Wet your hands with water and take a portion of the mixture to shape into kebabs.

9

Shape the kebabs to your desired length and seal the edges with your hands.

10

Make indentations on the kebabs using your fingers and thumb.

11

Ensure the meat mixture contains 70-75% meat and 20-25% fat for the best results.

12

Prepare all the kebabs in this manner; larger kebabs will yield about 4, while medium-sized ones will yield about 6 kebabs.

13

Take a large, old pan and cover it with aluminum foil.

14

Place the pan on the stove and set the flame to medium-high.

15

Place the kebabs in the preheated pan and cover immediately.

16

After 5 minutes, remove the cover and flip the kebabs to cook the other side.

17

Repeat covering and uncovering the kebabs every 5 minutes for a total cooking time of 15 to 20 minutes, maintaining a medium-high flame.

18

Do not brush the kebabs with oil as the fat in the meat is sufficient.
