Armenian Pickled Vegetables

1 cauliflower cut into medium pieces
2 cups mini carrots
3 to 4 small pickling cucumbers sliced almost 1/2" thick
10 small shallots peeled
1 1/2 large heads of garlic
10 mini bell peppers sliced
1 bag of 10 radishes sliced almost 1/2" thick
1/2 bunch parsley
1/2 bunch dill weed
1 white turnip sliced 1/2" thick
1 chili pepper diced (optional)
1/4 cup sugar
1 cup distilled water
2 cups white vinegar
1 1/2 cups seasoned rice vinegar
2 to 2 1/2 tablespoons salt

Cut all your vegetables and place them in a strainer.

Season with salt and place in a large strainer.

Leave to drain for at least 4 to 6 hours in the sink or overnight.

In a medium pot, place sugar, distilled water, white vinegar, seasoned rice vinegar, and salt.

Bring all this to a boil, then simmer for 7 to 10 minutes.

Take off heat and cool it off a little.

Place veggies in your jar, and pour the liquid over them and close the lid tight.

Set aside for 24 hours.

Every day, at least two to three times a day, shake your bottle up and down mixing the liquid inside, then place your jar upside down for at least 5 to 6 hours.

Repeat the steps every day for the next 3 to 4 days.
