Prepare dabeli masala mix by adding ground coriander, cumin, red chili powder, turmeric, cinnamon, cloves, and black salt into a jar and mix well.

Prepare date and tamarind chutney by soaking dates, tamarind, and optional ingredients like apricot and raisins overnight or boil them in a pressure cooker.

After boiling, add jaggery and blend to a smooth paste, then strain for a smooth texture.

Make garlic chutney by heating 1/4 cup of oil in a pan, adding 1/2 cup of crushed garlic, and cooking until the raw aroma is gone.

Add red chili powder, pavaji masala (optional), ground coriander, cumin, salt, and black pepper to the garlic and cook for a bit.

Add water to the chutney and cook until the water evaporates and the chutney is ready.

In a pressure cooker, heat a couple of tablespoons of oil, add cumin seeds, chopped onions, and salt, and cook until the onions are soft.

Add roughly chopped potatoes to the pressure cooker, add just enough water to prevent sticking, cover, and cook for 3-4 whistles on medium heat.

Once the pressure is released, check the potatoes for doneness and mash them with the dabeli masala until well combined.

Add optional brown sugar to balance flavors, and mix in whole fennel seeds for additional flavor.

Prepare the dabeli by making golf-sized balls of the potato mixture and flattening them for easy assembly.

Lightly toast the inside of the yeast rolls or burger buns in a toaster oven set to medium toast.

Assemble the dabeli by placing the flattened potato mixture into the toasted buns and adding peanuts, sev, and coriander leaves.
