1/2 cup sev
1/2 cup green coriander leaves (finely chopped)
1/2 cup sweet chutney
1/2 cup sing dana or masala peanuts

Roast 2 tsp coriander seeds, 1 tsp cumin seeds, 1 inch cinnamon stick, 2 cloves, and 4 black pepper with 1 red chilly until fragrant.

Let the roasted spices cool completely and then grind them finely to make dabeli masala.

In a heated pan or kadai, add 1 tbsp butter and 1 tbsp oil.

Add 1 pinch asafoetida and 1/2 tsp cumin seeds to the pan.

Once the cumin seeds turn brown, add 1/4 tsp turmeric powder, 1 green chilly (finely chopped), 1 inch grated ginger, and 1 tomato (finely chopped). Cook until the tomatoes are mashed nicely.

Add 3 boiled and peeled potatoes (finely mashed) to the mixture along with 1/2 tsp salt and 1.5 tsp dabeli masala. Mix well and cook until all ingredients are blended nicely.

Prepare the pav by making a cut in each piece. Spread some butter on top and beneath the pav for roasting.

Roast the pav until golden brown.

Stuff the pav with the dabeli filling, spreading 1/2 cup sweet chutney on one side and 1/2 cup green coriander chutney on the other side.

Add 1 tsp dabeli filling into the pav, followed by 1/2 cup pomegranate seeds, 1/2 cup sev, 1/2 cup sing dana or masala peanuts, and 1/2 cup green coriander leaves (finely chopped).

Serve the dabeli hot.
