1/4 cup evaporated milk
1/2 cup panko breadcrumbs (seasoned)
1 egg
1 small onion or 1/2 large onion (grated or minced)
1/2 tsp kosher salt
1/2 tsp ground white pepper
1 1/2 tsp ground allspice
1/4 tsp ground nutmeg
2 tbsp unsalted butter
1 tbsp neutral oil
4 tbsp unsalted butter (for gravy)
4 tbsp all-purpose flour
2 tbsp Worcestershire sauce
1 cup heavy cream
1 tbsp Dijon honey mustard
1/2 tsp kosher salt (for gravy)
1 cup beef broth or stock

Preheat the oven to 375℉.

Make the Meatball Mixture: Add the ground meat, egg, onion, garlic, spices, salt, and pepper. Then add the breadcrumbs and milk. Mix gently until just combined — overmixing can make the meatballs tough. The milk keeps the meatballs tender and prevents them from drying out.

Shape and Brown the Meatballs: Roll the mixture into small, evenly sized meatballs. Heat a skillet over medium heat and brown the meatballs on all sides until golden. They don’t need to cook through at this stage.

Remove the meatballs from the pan, then transfer them to the oven for about 7 minutes.

In the same skillet, melt butter and whisk in the flour to create a roux. Slowly pour in the beef broth, whisking constantly to avoid lumps. Next, add the heavy cream. Once the gravy thickens, stir in the cream and Worcestershire sauce. Season with salt and pepper to taste and Dijon mustard.
