Make garlic butter by mixing 100 grams of unsalted butter, 3-4 cloves of minced garlic, 1 teaspoon of chili flakes, and a little salt in a bowl.

Grate 200 grams of mozzarella cheese and set aside.

In a bowl, combine 1 cup of boiled sweet corn, 1 cup of finely chopped red capsicum, 1 cup of finely chopped green capsicum, 1 large finely chopped onion, 2 finely chopped green chillies, 1/2 teaspoon of salt, 1 teaspoon of pepper, 1 teaspoon of Italian seasoning, 1.5 teaspoons of red chili flakes, 1 cup of grated mozzarella cheese, and finely chopped coriander leaves. Mix well.

Spread garlic butter generously on both sides of 2 slices of bread.

Place the vegetable cheese filling on one slice and cover with the other slice, pressing gently.

Heat a pan and add a little butter, then place the sandwiches in the pan.

Toast on one side, applying butter on top, then close the pan and toast for a few minutes on medium-low flame until golden brown.
