  • 1 cup eggless mayonnaise
  • 4 slices whole grain bread
  • 1/2 cup cucumber, finely chopped

  • 1/4 tsp salt
  • 1 tbsp fresh parsley, chopped (optional)

Instructions

  1. 1In a mixing bowl, combine the eggless mayonnaise, cucumber, tomato, onion, black pepper, and salt.
  2. 2Mix all the ingredients until well combined.
  3. 3If using, add the chopped parsley and mix again.
  4. 4Take two slices of bread and spread a generous amount of the mayonnaise mixture on one slice.
