Instructions
- 1In a mixing bowl, combine the eggless mayonnaise, cucumber, tomato, onion, black pepper, and salt.
- 2Mix all the ingredients until well combined.
- 3If using, add the chopped parsley and mix again.
- 4Take two slices of bread and spread a generous amount of the mayonnaise mixture on one slice.
- 5Top with the second slice of bread to form a sandwich.
- 6Repeat the process with the remaining bread and filling to make additional sandwiches.
- 7Cut the sandwiches diagonally or into halves as preferred.
- 8Serve immediately or refrigerate until ready to serve.

- 8Drizzle the olive oil and balsamic vinegar mixture over the vegetables.
- 9Season with salt and pepper to taste.
- 10Top with the second slice of toasted bread and press down gently.
- 11Cut the sandwich in half and serve immediately.
