Honey is a natural sweetener, while jaggery is often cheaper and less processed.

Pour the water into your crockpot.

Grind the cardamom pods a little bit with a pestle and mortar and add to the crockpot.

Add the cinnamon sticks to the crockpot.

Add the peppercorns, cloves, ginger, and star anise to the crockpot.

Put on the lid and let it go for about 8 hours at a very low setting.

After 8 hours, strain out all the spices.

Add ½ cup brown sugar to sweeten and let it dissolve fully.

Add 12 bags of black tea and allow to simmer for about 3-5 minutes.

Remove the tea bags and serve.
