1 tbsp black peppercorns, crushed
1 tsp chili spice
1/4 cup fresh cilantro stems, chopped
2 lbs fresh salmon fillet
1 tbsp fresh ginger, grated

Add salt and sugar to a bowl.

Add black pepper and chili spice to the bowl.

Add cilantro stems (or dill) to the bowl and toss.

Rub ginger on top of the salmon.

Place the salmon in the refrigerator to cure for 12 hours.
